    The Classic Cut is a yearly release from Macallan since 2017, on American ex-bourbon casks and ‘sherry seasoned’ European and American oak. Not unimportant: at cask strength. When appearing in the store (if it gets to the shelf) you pay about 125 to 150 EUR for this, but you should not hesitate. They disappear like snow in the sun and then go to the auction market. The first edition – from 2017 – will cost you tenfold. This one from 2021, very recent, currently costs ‘only’ double the original price on the secondary market. Anyway, enough about that, back to the whisky.

    Delicious nose on warm apple pie, vanilla and oranges. Some marzipan and ginger. Yellow canned fruit. Milk chocolate with coconut filling. Fresh plums. Crispy red apples. Sherry. Typical house style and in this case very pleasant. I was busy with the nose alone for a good fifteen minutes. Nice!

    Oily on the palate and the strength is… a strength. The alcohol seems to be under control at first, but slowly builds up to make your mouth nice and warm. Vanilla and yellow fruit come first, followed by a nice spiciness (cinnamon, ginger, nutmeg, cocoa). Milk chocolate returns. Gently drying. Delicious.

    The finish is long, starts sweet and then slowly but surely becomes a bit bitter and dry. And that works fine in this case. Pure oak on the deathbed.

    The Classic Cut has never disappointed me, which I can’t say about all Macallan. And this one has more cocoa to offer than the recent Rich Cacao, imagine that!
